The Role: Precision & Performance
As Head Chef, the successful candidate will be the driving force behind a menu centered on premium cuts and high-intensity griddle work.
The role involves working with locally sourced ingredients and high-end dry-aged meats.
Key Responsibilities
Lead from the Front
Stay hands-on during service, cooking steaks to precise temperatures and managing high-volume covers with ease.
Meat Mastery
Expertly handle, prep, and execute the cook on premium aged and dry-aged cuts.
The Art of the Burger
Perfecting the high-intensity technical nuances of the premium smash burger.
Kitchen Management
Oversee all food safety (HACCP), hygiene standards, and inventory.
Culture
Foster a professional, high-energy environment for the kitchen brigade.
What Prince of Wales Hotel Is Looking For
Experience
Minimum of 10 years in professional kitchens, with significant time spent in a dedicated steakhouse or high-end grill environment.
Technical Expertise
Deep knowledge of beef cuts, fat content, and the aging process.
Artistry
“Culinary Artist” levels of plating and consistency.
Leadership
A calm-under-pressure mentality and a reputation for being reliable and punctual.
Certifications
Level 2 Food Hygiene essential (Level 3 preferred).
